American Oak ex-Bourbon
Our American Oak ex-Bourbon single casks are some of our most awarded and esteemed expressions. Aged in 200L American Oak ex-Bourbon casks, this oak varietal beautifully enhances our distinctive and fruity spirit. With a robust malt base, it unfolds layers of vanilla, caramel, coconut, fruit, and delicate hints of white floral and herbal notes. As single cask bottlings, every batch presents distinct nuances, reflecting the character of each barrel.
Cask number TD0342 was distilled in December of 2008 and decanted in November of 2023, maturing at 14 years, 8 months, in a single 200-litre, first-fill American oak bourbon cask. Yielding 215 bottles in total, this whisky is bottled at a strength of 47.1% abv.

Nose
Ripe and fruity! Reaching out of the glass with peach syrup, nectarine, and pillowy sweetness. Pineapple lollies and white marshmallow comes next; Sullivans Cove hallmark spirit notes mingle with the vanillin and sugars of the American oak beautifully. There is a nutty undertone, also born of the oak (salted macadamia nuts) that meets the beautiful toffee notes perfectly. More fruity confectionary continues to pour out of the glass: watermelon candies, passionfruit and raspberry bullets.
Palate
Very, very vibrant on the palate! Great presence straight away with a full, round texture and body, and bursts of fruit. Juicy fruits and orange pith mingle with a lovely musky grape note, as sweetly spiced and earthy notes of a gingerbread house (icing included!) and Liquorice Allsorts and come together in the midsection. Relentlessly fruity, pineapple, melon, quince and more musky confectionaries carry over to the finish.
Finish
The finish becomes delightfully creamy with American oak-derived notes of Crème Brûlée, coconut milk and vanilla bean paste. Huge waves of nectarine and peach are still there too, flowing in and out, but the vanillic, American oak notes outlast all. A touch of dryness from the oak carries the finish away with generous length.
