17 Year Old 'Old & Rare' French Oak ex-Tawny Single Cask TD0187 was filled in June of 2007 and decanted in September of 2024 for a maturation of 17 years, 3 months. After such a long maturation, this 300L French oak cask yielded only 443 bottles at 47% ABV.

Boasting a depth and refinement that can only come with age, our Old & Rare French Oak single casks are matured for a minimum of sixteen years in French oak casks previously used to age Australian Tawny Port-style fortified wine. Aside from the notes of juicy dark fruits, chocolate, spice, nuts and earthy herbal nuances, these single casks display incredible complexity and length of palate.

Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by our Distillery Manager, Heather Tillott.

  • Nose

    Sweet and comforting, the aroma opens with milky black tea laced with a dusting of cocoa powder. A floral touch of rose petals and lemongrass adds a delicate, exotic character. Waxy mango skin introduces tropical richness, balanced by the nutty warmth of walnuts and pecan pie. Pepperberry spice and dried citrus wheels bring vibrancy, while rich honey and custard doughnuts dusted with icing sugar add a luscious sweetness. Cashews complete the profile with a subtle, creamy nuttiness.

  • Palate

    Silky and full-bodied, the palate showcases a soft orange note and an abundance of grapey sweetness. Creamy textures unfold with a malt milkshake-like richness, paired with light tannins reminiscent of a second-use tea bag. Coffee crema and plums deepen the profile, while a touch of BBQ sauce and hoisin adds savoury intrigue. Hints of basil, a sprinkle of cinnamon, and a whisper of shortbread round out this balanced and layered experience, with a light salinity enhancing the overall complexity.

  • Finish

    A tropical wave introduces the finish, with white peach and sticky figs leading into stewed cherries and plums. Herbal notes of basil and oregano linger, supported by a broad and balanced grip. Cola-like sweetness meets rosemary and lamb fat for a savoury twist, complemented by the elegant aromatics of Earl Grey tea and a touch of tobacco (sans smoke). The finish is harmonious, evolving gracefully and leaving a long-lasting impression.
